One-Pot Beef Taco Pasta
One-pot beef taco pasta is everything kids and grown-ups love about taco night, in a cosy, cheesy pasta — and it all cooks in a single pot. The pasta simmers right in the seasoned beef and tomato sauce, so it soaks up flavour and you skip draining a colander.

Tips for the best one-pot taco pasta
Brown the beef well for deep flavour, stir the pasta a few times as it simmers so it doesn’t stick, and add the cheese off the heat so it melts creamy rather than greasy. Cook ground beef to a safe internal temperature of 71°C (160°F).

Procedure

Brown the ground beef in a large pot over medium-high heat for 5–6 minutes, breaking it up.

Add the onion and garlic and cook for 3 minutes, then stir in the taco seasoning for 30 seconds.

Pour in the beef stock, chopped tomatoes and pasta shells and stir well.

Bring to a simmer, cover, and cook for 12–14 minutes, stirring a few times, until the pasta is tender and the sauce has thickened.

Take off the heat, stir through the cheddar until melty, then top with more cheese, green onion and cilantro.
